Set up the Snowflake Data Source
To configure the data source, choose Configuration, Data Sources, Add data source, Snowflake.
Add your authentication details, and the data source is ready to query!

For anyone with this issue, the solution is to enable admin on the authentication screen for grafana, then log into the grafana workspace and select Configuration -> Data Sources. The AWS docs misleadingly imply that the data sources should appear in their UI.
