This front page for AppSync links repeatedly to this blog/tutorial:

Which asks me to 'start from a sample project' - however that is not an option presented to me. I can only create from scratch.
Where can I find the sample projects? I am particularly interested in the "Event App" sample.
Here are quite a few AppSync projects that you can check out. There is also an AppSync workshop that helps with being hands on.
The blog might need to be updated. I will follow up on that.
