COPY into table with default, non-null column

When using Redshift Serverless COPY commands fail when copying into a table with non-null columns with default values. This can be reproduced by following this example from the AWS docs.

When running it in a serverless cluster I receive the error: Missing data for not-null field

This example runs correctly on a managed Redshift cluster.
