AWS Organizations and Accounts - Without email address verification

We are planning on using Amazon SES to send emails on behalf of our multiple clients. We'd want to keep track of how many emails are sent for each client each month and we would want to report on bounces and complaints, etc. for each client. We are leaning towards using AWS Organizations and Accounts. First of all, is this the best route to take? Next, is there a way to create an internal account where the email doesn't need to be verified by the client so they are unaware of how we are monitoring the email statistics. We could create specific emails for clients i.e. clientA@mycompany.com but I would rather not maintain those if possible. Any advice would be greatly appreciated! Thanks in advance.
