You've got a few options I believe. You could setup SNS events to have your email data sent to an endpoint - that could be an email address or perhaps a URL. You could also look at using an alternative method, perhaps a third party tool which mostly does this for you. If you wanted to capture this yourself then you'd need to to listen for the SNS events and store them in a database of some sort. The great thing about this or if you're doing it via an external tool like SES Email Monitor then you'll see all of the deliveries, bounces, complaints, etc. If it's something you need then you can also get things like open and click events.
